PREFERENZ® M 100 is an alkaline mannanase for use in liquid laundry
products. Mannanases are useful for removing tough (food) stains such
as ice-cream, chilled desserts, dairy products and salad dressings. These
products often contain galacto-mannan gums such as locust bean and guar
gum. These gums bind strongly to cellulose fibers and attract soil particles
suspended in the wash water due to their adhesive properties.
PREFERENZ® M 100 mannanase cleaves the β -1.4 linkages between mannose units via hydrolysis. The resulting water-soluble carbohydrate fragments are then transported away from the fabric by the wash water.
